BEDFORD — Del Taco officially opened its doors to customers at 3060 John Williams Boulevard in Bedford at 10 a.m. Wednesday, and some local residents were willing to wait nearly 15 hours to be among the first through the doors.
The restaurant’s grand opening drew an early crowd, with people beginning to line up at about 7 p.m. Tuesday to secure a spot among the first 100 patrons.
Those first 100 customers received a free Del Taco T-shirt and tacos for a year as part of the grand opening celebration.
The excitement surrounding the new restaurant was evident well before the doors opened, as customers gathered Tuesday evening and spent the night waiting for their chance to be among the first to experience Del Taco in Bedford.
Co-owner Eugene Kim said the restaurant’s emphasis on fresh food is one of the things that distinguishes Del Taco.
“I think it’s our freshness. We cook our chicken and steak fresh to order and make our guacamole and pico de gallo every morning. As owners, we are very proud of that,” Kim said.
Kim said the decision to bring Del Taco to Bedford was also driven by partner Cole Sinclair, a Marine veteran who became familiar with the restaurant while serving in California.
“Really, the credit goes to Cole Sinclair, who is our partner. He served in the Marines, and he ate Del Taco in California quite a bit and thought it would be a great fit for Bedford and a great opportunity to bring it to the state of Indiana,” Kim said.
The Bedford location offers a diverse menu designed to provide something for everyone in the family. In addition to tacos and other Mexican-inspired favorites, Del Taco offers top-quality burgers, chicken fingers, and fries, providing familiar options for picky eaters.
The menu also includes burritos, quesadillas, and other items, giving customers a wide variety of choices each time they visit.
Kim said the ownership team is grateful for the reception the restaurant has received from the community and hopes to build a lasting relationship with local customers.
“I want to thank the community for supporting us, and we hope to do them right by serving great food in a great place to hang out,” he said.
With the restaurant now open, the owners are looking forward to becoming part of the Bedford community and introducing local customers to the Del Taco experience.
